The Lankaaster is a semi-firm cheese with a slightly opened texture. Shaped as a loaf/wheel to express the fact that it is meant to be sliced and eaten directly on bread as the Dutch farmers do. It has unique flavour profile that is given by the specific starter culture we use and makes it typical of cheese made on Dutch farms earlier in the century. Surface-ripened individual cheese made in the traditional essence with a semi-soft paste, and mixed rind with ivory and pale orange color, complex yeasty rind with delicate aroma of fruits and vegetables.
