Bridge End Bloomy

A luscious bloomy made from full fat Brown Swiss cow milk, moulded into 3 inch square individual cheeses, with a lovely wrinkly bloom, flavors of butter, herbs, and mushroom. At 3 weeks, the paste is creamy and unctuous, a new soft cheese for all who love a quality bloomy rind.
